Banana Bread

1 cup sifted Vital Wheat Gluten Flour (24 carbs)
1/2 cup ground almonds (14 carbs with 8 grams fiber = 6 carbs)
1/2 cup sifted soybean flour (16 carbs with 8 grams fiber = 8 carbs)
1/2 tsp baking soda
1/4 tsp salt

Combine above ingredients and set aside. In another bowl combine:

2 eggs (1 carb)
1/4 cup oil
2 tablespoons cream (.8 carbs)
2 tablespoons water
1/2 cup Splenda pourable (12 carbs)
1 tsp vanilla

Add flour to above mixture alternately with:

2 mashed bananas (about 1 cup) (52.8 carbs with 5.4 grams fiber = 47.4 carbs)

Pile into a greased loaf pan and bake 350 degrees for 50 minutes. Cool in pan for 10 minutes before removing bread to a rack to cool.

Total carbs for recipe is 120.6 with 21.4 grams of fiber = 99.2 net carbs
18 (1/2 inch) slices would be 5.5 net carbs per slice

Walnuts are 3 carbs and 3 grams of fiber per 1/4 cup so you could add a 1/2 cup of nuts, only raising the total count by a couple of carbs.
