Beef and Turnip Stew

2 pounds stewing beef
1 cup chopped onions (13.8 carbs with 2.8 grams fiber = 11 carbs)
2 stalks sliced celery (3 carbs with 1.4 grams fiber = 1.6 carbs)
6 cups water
2 Knorr Swiss boullion cubes (package says less than 1 gram carb per cube)

Let this simmer for 2 hours, until meat is almost soft. Then add:

4 sliced carrots ( 29 carbs with 8.8 grams fiber = 20.4 carbs)
2 cups cubed turnips (16.4 carbs with 4.6 grams fiber = 11.8 carbs

and simmer until vegetables are soft. Thicken with Xanthum gum (or you could use not/starch) until gravy is as thick as you like it.

Then add:

1/2 cup frozen baby peas (11 carbs with 5 grams of fiber = 6 carbs)

and heat through.

Total carbs for recipe are 74.3 with 22 grams of fiber = 52.3 net carbs

6 servings = 8.7 carbs
