Beef Jerky

This is one I make all the time.
Take thinly sliced beef. Lean, I use a lean roast. I freeze it first then slice it on my meat slicer, but you can slice with a knife if it isn't frozen solid.

4 tsp. salt (I cut it back to 2 1/2 cause I found it very salty)
1 tsp each of pepper, chili powder, garlic powder, and onion powder
1/4 tsp. cayenne pepper
few dashes of liquid smoke
1/2 cup water
2 pounds of meat... I use more or less...

Mix ingredients together and marinade meat over night. Lay out flat on racks and either use dehydrator or I just put it in my oven set on very low like 150. For several hours, I check when I can start to smell it. Take off rack when dry. If left on too long or sliced too thin it will be brittle. If taken off too early or sliced too thick it will be very chewy. Either way it is sooooo good.
